Tuna And Olive Pasta
- 18 oz spiral pasta
- 1 tbsp olive oil
- 1 None onion, chopped
- 2 cloves garlic, minced
- 1 (28 oz) can diced tomatoes
- 4 None anchovy fillets, chopped
- 1 tsp sugar
- 1/2 tsp chili powder
- 1 (15 oz) can tuna, drained, flaked
- 2.5 oz black olives
- 2 tbsp capers
- 2 oz baby spinach
- None None crusty bread, to serve
- Cook pasta in boiling salted water until al dente. Drain.
- Meanwhile, heat olive oil over medium heat. Saute onion and garlic for 2-3 mins, until tender. Add diced tomatoes, anchovy fillets, sugar and chili powder. Simmer for 10 mins. Fold in tuna, olives and capers. Gently heat for 1-2 mins then add pasta and spinach and toss to combine.
- Serve with crusty bread.
