Tuna And Olive Pasta

  1. Cook pasta in boiling salted water until al dente. Drain.
  2. Meanwhile, heat olive oil over medium heat. Saute onion and garlic for 2-3 mins, until tender. Add diced tomatoes, anchovy fillets, sugar and chili powder. Simmer for 10 mins. Fold in tuna, olives and capers. Gently heat for 1-2 mins then add pasta and spinach and toss to combine.
  3. Serve with crusty bread.
