Summer Mixed Salad
- 2 tbsp white wine vinegar
- 1 tbsp lemon juice
- 1 tsp sugar
- 5 tbsp olive oil
- 1 None small iceberg lettuce, sliced
- 7 oz canned baby corn, drained
- 4 None hardboiled eggs, shelled and cut into wedges
- 1/2 bunch spring onions, sliced
- 1/2 None small red onion, thinly sliced
- 5 oz cherry tomatoes, halved
- 4 oz Mozzarella cheese, sliced
- None None basil leaves,to garnish
- To make the dressing, put the vinegar, lemon juice, sugar and oil in a bowl with a little seasoning and mix together.
- Scatter the lettuce in a salad bowl and arrange the corn, eggs, spring onions, red onion, tomatoes and mozzarella on top. Add the dressing and mix gently to combine. Serve garnished with basil leaves.
