Warm Pear And Blue Cheese Salad
- 2 tbsp butter
- 2 tbsp olive oil
- 3 None pears, each cut into 8 wedges
- 6 oz soft blue cheese, such as bleu d'auvergne or gorgonzola, sliced
- 6 oz red cabbage, shredded
- 7 oz mixed greens
- None None DRESSING
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- Heat butter and oil in a large frying pan. Cook pears over medium-high heat for 3-4 mins, until golden brown. Drain on paper towels then transfer to a large bowl and toss with cheese. Set aside.
- Add red cabbage to pan juices and cook over high heat for 2-3 mins, until beginning to soften. Add to pears along with mixed greens. Toss to combine then distribute between 4 serving plates.
- For the dressing, whisk together olive oil, vinegar and mustard. Drizzle over salad to serve.
