Smoked Lamb With Lemon And Chili Linguine
- 3 tbsp sunflower oil
- 500 g smoked lamb fillet
- 400 g linguine
- 300 g yellow courgette, sliced
- 1 None onion, diced
- 1 None red chilli, thinly sliced
- 125 g mascarpone
- 3 tbsp cornflour
- None None Zest and juice of 1 lemon
- Heat the oil in a large frying pan, add the lamb and saute for 8-10 mins, turning.
- Cook the pasta in salted, boiling water according to the package instructions.
- Remove the lamb from the pan and season. Wrap in foil and set aside. Add the zucchini, onion and 1/3 cup water to the frying pan and saute over a medium heat for 4-5 mins, stirring. Mix in the chili and simmer for 1-2 mins.
- Mix the mascarpone into the vegetables. Mix the cornmeal with 4 tbsp water until smooth then mix into the sauce and simmer, stirring for 1-2 mins until it thickens. Mix in the mint, lemon zest and lemon juice. Season. Drain the pasta and mix with the sauce.
- Unwrap the lamb and slice. Arrange on 4 plates and add the pasta. Serve.
