White Chocolate Truffle Snowmen
- 13 oz white chocolate, chopped + 3 oz melted
- 1/2 cup heavy cream
- 1/4 cup dried sweetened cranberries, finely chopped
- 1/3 cup unsalted pistachios, toasted, finely chopped
- 3 oz dark chocolate, melted
- None None sprinkles
- 2 1/2 tbsp desiccated coconut
- 4-5 None jelly beans, 3 halved, remainder sliced into 12 pieces
- 6 None white marshmallows
- Heat chopped white chocolate and cream over very low heat, stirring, until melted and mixture is smooth. Remove from heat and add cranberries and pistachios. Transfer to a clean bowl, cover with plastic wrap and chill, stirring occasionally, for 1 hour, or until firm.
- Meanwhile, line 2 baking trays with parchment paper. Transfer melted dark chocolate to a piping bag. Pipe 12 - 3/4 inch "arms" and 6 - 2 inch discs for "hats." Coat hats with sprinkles. Set aside until hardened.
- Roll chilled white chocolate mixture into 6 - "large" (1 1/2 tbsp) balls, 6 - "medium" (1 tbsp) balls and 6 - "small" (1 1/2 tsp) balls. Roll in coconut then place on a lined baking sheet and chill for 5 mins, until set.
- To assemble snowmen, transfer melted white chocolate to a small piping bag. Glue large, medium and small balls together with a little melted chocolate to form 6 snowmen. Attach arms. Glue on halved jelly beans for noses and sliced jelly beans for eyes. Glue a marshmallow onto each sprinkled disc to finish the hat.
