Mini Tex-Mex Meatloaves
- 1 None medium onion, peeled and chopped
- 15 oz can corn with kidney beans and peppers, drained and rinsed
- 1 2/3 lbs ground meat (e.g. beef, pork, veal or a mixture)
- 2 tbsp breadcrumbs
- 1 None medium egg
- 1 tbsp chili paste
- 1 lb tomatoes, chopped into small chunks
- 2 cloves garlic, peeled and finely chopped
- 1 bunch cilantro, finely chopped, reserving a few leaves for garnish
- 2 tbsp olive oil
- 3 1/2 oz tortilla chips
- 1-2 tsp paprika, for dusting
- In a bowl, mix the meat, onion, breadcrumbs, canned vegetables, chili paste and egg. Season. Knead the mixture with your hands so it is fully mixed, then divide the mixture into 4 portions. Shape each portion into a small loaf then place on a baking sheet lined with parchment. Roast in a preheated oven at 400u0b0F for 25-45 mins.
- To make the salsa, mix the tomatoes, garlic, cilantro and oil in a bowl and season. Serve the meatloaves with the tortilla chips and the salsa on the side. Dust the plate with a little paprika if desired.
