Mini Tex-Mex Meatloaves

  1. In a bowl, mix the meat, onion, breadcrumbs, canned vegetables, chili paste and egg. Season. Knead the mixture with your hands so it is fully mixed, then divide the mixture into 4 portions. Shape each portion into a small loaf then place on a baking sheet lined with parchment. Roast in a preheated oven at 400u0b0F for 25-45 mins.
  2. To make the salsa, mix the tomatoes, garlic, cilantro and oil in a bowl and season. Serve the meatloaves with the tortilla chips and the salsa on the side. Dust the plate with a little paprika if desired.
