Pork And Squash Stir Fry

  1. In a small bowl, combine pork, sherry, soy sauce and sugar. Chill, covered, for 20 mins.
  2. Meanwhile, heat oil in a wok or large frying pan over high heat. Stir-fry squash for 5-6 mins, until golden and almost tender. Set aside.
  3. Drain pork, reserving marinade. Stir-fry for 3-4 mins. Set aside.
  4. Stir-fry onion, pepper, garlic and cardamom for 2-3 mins. Return squash and pork to pan along with reserved marinade. Stir-fry for 1-2 mins, until mixture comes to a boil. Reduce heat to medium and add spinach. Toss until wilted.
  5. Serve with lime wedges.
