Pork And Squash Stir Fry
- 12 oz pork tenderloin, thinly sliced
- 2 tbsp sweet sherry
- 2 tbsp light soy sauce
- 2 tsp brown sugar
- 2 tbsp vegetable oil
- 1 lb winter squash, peeled, cut into thin wedges
- 1 None onion, sliced
- 1 None red pepper, seeded, sliced
- 2 cloves garlic, finely chopped
- 1/4 tsp ground cardamom
- 3 oz baby spinach
- None None lime wedges, to serve
- In a small bowl, combine pork, sherry, soy sauce and sugar. Chill, covered, for 20 mins.
- Meanwhile, heat oil in a wok or large frying pan over high heat. Stir-fry squash for 5-6 mins, until golden and almost tender. Set aside.
- Drain pork, reserving marinade. Stir-fry for 3-4 mins. Set aside.
- Stir-fry onion, pepper, garlic and cardamom for 2-3 mins. Return squash and pork to pan along with reserved marinade. Stir-fry for 1-2 mins, until mixture comes to a boil. Reduce heat to medium and add spinach. Toss until wilted.
- Serve with lime wedges.
