Almond Harissa Roast Lamb
- 4 cloves garlic, peeled, halved
- 1 tbsp harissa paste
- 2 tbsp coarsely chopped fresh flat-leaf parsley
- 2 None large Spanish onions, peeled, sliced thinly
- 1/2 cup olive oil
- 2/3 cup ground almonds
- 1 (4 lb) leg of lamb
- Preheat oven to 425u0b0F.
- Combine garlic, harissa paste, parsley, 1 onion and 1/3 cup oil in a blender or food processor. Process until smooth. Transfer to a medium bowl and stir in ground almonds.
- Arrange remaining onion in a large roasting pan. Make deep cuts in the lamb to the bone at 1 inch intervals then coat with almond mixture. Arrange over onions and drizzle with remaining oil. Season. Roast for 25 mins.
- Reduce oven to 325u0b0F. Roast lamb for another hour, or until cooked to your liking. Remove lamb from oven and cover loosely with foil. Let rest for 20 mins before slicing.
