Crab Newenburg
- 1/4 small onion, minced
- 1 Tbsp. green pepper (dry)
- 1 Tbsp. celery (dry)
- 5 Tbsp. butter
- 1 Tbsp. parsley
- 1/4 tsp. garlic powder
- 1 tsp. chives
- 1/4 tsp. dry mustard
- 1/4 tsp. ginger (optional)
- 1/4 tsp. cinnamon (optional)
- 3 Tbsp. flour
- 1 can condensed milk
- 1/2 c. water
- 3 c. crab
- 4 hard-boiled eggs, minced
- 1 tsp. paprika
- 1 tsp. each salt and pepper
- 1 small can mushrooms (optional)
- 1 c. soda cracker crumbs
- Saute onion, green pepper, celery, butter, parsley, garlic powder, chives, dry mustard, ginger and cinnamon in a 3-quart saucepan.
- Add to sauteed mixture the flour, condensed milk, water, crab, eggs, paprika, salt and pepper and mushrooms.
- Cook 10 minutes or until bubbly.
- Add soda cracker crumbs.
- Turn into rectangle buttered baking dish.
- Cook at 350u0b0 for 15 to 25 minutes. Serves 6 to 8 people.
- Very rich.
