Spaghetti With Prawns In Tomato Sauce

  1. For tomato sauce, heat 3 tbsp olive oil in a saucepan and sweat onion until soft. Add bay leaves and oregano and cook briefly. Add tomato paste, tomatoes and stock. Crush tomatoes, bring to a boil and simmer for 15 mins. Season and add sugar.
  2. Meanwhile, cook spaghetti in boiling salted water according to package directions. Drain.
  3. Heat 2 tbsp olive oil in a pan, saute peppers and set aside. Add prawns and saute for 3 mins. Add garlic and cook for 1 min. Season, remove from heat and set aside.
  4. To finish, add pepper to tomato sauce along with orange juice and zest and cook until peppers are heated through. Toss with spaghetti and arugula and top with prawns.
