Honey-Glazed Chicken Drumsticks With Rice Salad And Salsa

  1. Preheat the oven to 400u0b0F. Grease a roasting pan. Season the drumsticks and arrange in the prepared pan. Roast for 25 mins. Mix the honey, 1/2 tsp cayenne and 1 tbsp oil. Brush over the drumsticks then return to the oven for 5 mins or until the juices run clear.
  2. Meanwhile, cook the rice in boiling salted water according to the package instructions. Drain, rinse under cold water and allow to cool.
  3. For the salsa, mix the pepper, chili, onions, lime zest, garlic, 6 diced tomatoes and 4 tbsp oil. Season and add a pinch of sugar and a few drops of lime juice.
  4. In a separate bowl, mix the yogurt with 1 tsp cayenne, 2 tbsp pineapple juice and a few drops of lime juice. Season then add the cilantro. Toss with the rice, tomato wedges, pineapple chunks and peas.
  5. Remove the drumsticks from the oven and serve with the rice salad and salsa.
