Marinated Chicken Drumsticks With Sesame Potatoes
- 2 cloves garlic, peeled and finely chopped
- 1 None small red chilli, deseeded and chopped
- 3 sprigs fresh flat-leaf parsley, finely chopped
- 4 sprigs fresh thyme, finely chopped
- 1 tsp mustard
- 1 tsp brown sugar
- 1/2 tsp sweet paprika
- 4 tbsp sesame oil
- 8 None skin-on chicken drumsticks
- 1 kg new potatoes
- 2 tbsp sesame seeds
- 2 None spring onions, sliced
- 5 None lettuce leaves, torn into bite-sized pieces
- 1 None carrot, peeled and grated
- 5 None cherry tomatoes, quartered
- Preheat oven to 400u0b0F. Mix garlic, chili, parsley, thyme, paprika, mustard, sugar and 2 tbsp sesame oil. Coat chicken then transfer to a roasting pan and season with salt. Roast for 40-45 mins, until juices run clear.
- Meanwhile, cook potatoes in boiling salted water for 20 mins, until soft. Drain and cut in 1/2. Heat 2 tbsp sesame oil and saute potatoes for 5 mins. Add sesame seeds and spring onions and season.
- To serve, toss lettuce, carrot and tomatoes and arrange in serving bowls. Top with drumsticks and serve with potatoes.
