Egg Free Meat Loaf With Vegetables
- 1 2/3 lbs ground beef
- 1 small red onion, grated
- 3/4 cup fresh breadcrumbs
- 1 None carrot, grated
- 5 oz frozen chopped spinach, thawed and squeezed dry
- 1/2 cup grated Cheddar cheese
- 1/2 cup barbecue sauce
- 1/4 cup Worcestershire sauce
- 2 tbsp tomato paste
- 1 tbsp chopped parsley
- 2 cloves garlic, crushed (optional)
- 1 tbsp sesame seeds
- None None Broccoli, carrots, roasted potatoes and gravy, to serve
- Preheat the oven to 350u0b0F. Lightly grease a baking pan.
- Combine all ingredients except sesame seeds in a large bowl, mixing well. Halve mixture and form into 2 loaves on prepared pan. Sprinkle with sesame seeds and press in slightly. Cover with foil.
- Bake 30-35 mins, draining liquid after 20 mins.
- Remove foil and bake a further 10 mins, until loaf is browned. Let stand 5 mins then cut into thick slices. Serve with broccoli, carrots, potatoes and gravy.
