Turkey Strips With Chili And Egg Fried Rice

  1. Cook the rice in boiling salted water according to package directions.
  2. Heat the oil in a large, nonstick frying pan. Fry the turkey over a high heat for 3-4 minutes until brown on both sides and remove it. Add the chili, leeks and carrots and cook in the hot oil over a medium heat, for 3-4 minutes. Stir in the cooked rice and turkey, and saute for 2-3 minutes. Whisk the eggs and soy sauce together. Pour the mixture into the pan, and cook while stirring for about 2 minutes, and season to taste.
