Asian Mussels With Pork
- 2 tbsp oil
- 150 g pork tenderloin, cut into thin strips
- 100 g bacon, diced
- 2 None shallots, peeled and finely diced
- 2 cloves garlic, peeled and finely diced
- 1 stalk lemon grass, halved, centre finely chopped
- 2 cm piece fresh root ginger, peeled and grated
- 4 tbsp soy sauce
- 1 None lime, juiced
- 2 tbsp fish sauce
- 100 g bean sprouts
- 2 kg fresh mussels, scrubbed, beards removed, any open shells discarded
- 6 sprigs fresh coriander, little reserved for garnish, remainder finely chopped
- 75 g peanuts, roughly chopped
- Heat the oil in a Dutch oven and sear the pork and bacon until browned. Add the shallots, garlic, lemongrass and ginger and saute for 2 mins. Add the soy sauce, lime juice, fish sauce, beansprouts, mussels and 1/2 cup water. Cover and simmer for 8 mins, until the mussels have opened.
- Discard any unopened shells and sprinkle with the cilantro and peanuts.
