Asian Mussels With Pork

  1. Heat the oil in a Dutch oven and sear the pork and bacon until browned. Add the shallots, garlic, lemongrass and ginger and saute for 2 mins. Add the soy sauce, lime juice, fish sauce, beansprouts, mussels and 1/2 cup water. Cover and simmer for 8 mins, until the mussels have opened.
  2. Discard any unopened shells and sprinkle with the cilantro and peanuts.
