Chicken, Mushroom And Corn Soup

  1. In a large saucepan, combine stock, water, sherry, ginger, garlic and sugar on high. Bring to boil. Simmer 3 minutes.
  2. Stir in chicken, mushrooms and corn. Season to taste. Simmer for another 5 minutes.
  3. Add choy sum, onions and chili. Simmer 1 minute. Serve immediately with a drizzle of soy sauce, if desired.
