Chicken, Mushroom And Corn Soup
- 2 cups chicken stock
- 2 cups water
- 1/4 cup sherry
- 1 tbsp grated fresh ginger
- 2 cloves garlic, minced
- 2 tsp brown sugar
- 1 None boneless, skinless chicken breast, thinly sliced
- 4 oz button mushrooms, thinly sliced
- 1/2 cup baby corn, halved lengthways
- 1/2 bunch bok choy, sliced
- 6 None spring onions , sliced
- 1 None red chili, sliced
- None None Soy sauce (optional), to serve
- In a large saucepan, combine stock, water, sherry, ginger, garlic and sugar on high. Bring to boil. Simmer 3 minutes.
- Stir in chicken, mushrooms and corn. Season to taste. Simmer for another 5 minutes.
- Add choy sum, onions and chili. Simmer 1 minute. Serve immediately with a drizzle of soy sauce, if desired.
