Banana Bread
- 1 1/2 cups self-rising flour
- 3/4 cup flour
- 1 1/2 cups firmly packed brown sugar
- 1 tsp cinnamon
- 1 tsp baking soda
- 3 None eggs, beaten lightly
- 1 1/4 cups light sour cream
- 12 tbsp (1 1/2 sticks) butter, melted
- 1 1/2 cups mashed banana
- None None Pecans, hazelnuts, pepitas, to decorate, optional
- 1 tbsp demerara sugar, optional
- Preheat the oven to 325u0b0F. Grease two 8 x 4-inch loaf pans. Line bottom and sides with parchment paper.
- Sift flours into a large bowl. Add brown sugar, cinnamon and baking soda; mix well. Whisk eggs and sour cream in a large bowl. Stir in butter and banana. Stir egg mixture into flour mixture until smooth. Pour into prepared pans. Top with nuts and sprinkle with sugar, if desired.
- Bake for 50-55 mins or until toothpick inserted into center comes out clean. Cool in pans 10 mins. Remove from pans; cool completely on wire rack.
