Spaghetti With Capers, Lemon And Arugula
- 1 pkg (1 lb) spaghetti
- 1/2 cup olive oil
- 1/4 cup capers, rinsed
- 4 cloves garlic, finely chopped
- 1 None lemon, peel finely grated
- 2 None large red chili peppers, seeded and finely chopped
- 1/4 cup lemon juice
- 1/4 cup grated Parmesan cheese
- 2 oz arugula leaves
- Cook spaghetti in a large pot of boiling salted water according to package directions.
- Heat oil in a large skillet on medium heat. Add the capers and cook for 2 mins. Add the garlic, lemon peel and chili peppers and cook for 1 min, or until aromatic.
- Drain the pasta, reserving the cooking liquid. Add the pasta along with a little of the cooking liquid to the caper mixture and stir to combine. Stir in the lemon juice, Parmesan cheese and arugula. Season with sea salt and pepper.
