Quinoa Cookies
- 7 tbsp butter, chopped
- 1/3 cup firmly packed brown sugar
- 1/3 cup honey
- 1/3 cup smooth peanut butter
- 1 tsp vanilla bean paste
- 1 1/2 cups rice flour
- 1 cup quinoa flakes
- 1 tsp baking powder
- None None Powdered sugar, to dust
- Preheat the oven to 350u0b0F. Grease and line 2 baking pans with parchment paper.
- Combine the butter, brown sugar, honey, peanut butter and vanilla in a saucepan on low heat. Stir for 5 mins or until melted and combined. Cool slightly.
- Combine the rice flour, quinoa and baking powder in a large bowl. Stir in the cooled peanut butter mixture to form a dough. Roll heaped tablespoons of dough into 20 balls. Place on prepared pans about 2 inches apart and flatten slightly. Refrigerate for 15 mins.
- Bake for 15 mins or until golden brown. Cool completely in pans on wire rack (the cookies will firm up). Serve dusted with powdered sugar.
