Ham, Cheese And Egg Bake
- 2 tbsp butter
- 1/2 None leek, washed and sliced
- 4 oz cooked ham, coarsely chopped
- 1/2 cup fresh herbs of choice, chopped, plus additional to serve
- 5 None eggs
- 1/2 cup grated Parmesan cheese, plus additional, shaved, to serve
- 2/3 cup heavy cream
- 1 tsp coarse grain mustard
- Preheat the oven to 300u0b0F. Lightly grease a 1 1/2 quart baking dish.
- Melt butter in a small skillet on medium heat. Saute leek 2-3 mins, until tender. Stir in ham and herbs and cook 1 min. Cool.
- Whisk eggs, cheese, cream and mustard in a medium bowl. Season.
- Place baking dish into a roasting pan. Spread ham mixture in baking dish. Pour egg mixture over top. Add hot water to roasting pan to come halfway up sides of baking dish.
- Bake 25-30 mins, until just set. Sprinkle with additional herbs and Parmesan cheese.
