Lamb Kofta With Cucumber Yogurt

  1. Combine lamb, garlic, onion, chili, cilantro, mint and ras el hanout in a large bowl. Season with salt and pepper and mix well. Cover, refrigerate for at least 1 hour.
  2. Meanwhile, to make cucumber yogurt, combine the cucumber, yogurt, cumin, mint and salt to taste in a medium bowl and stir well to combine.
  3. Divide lamb mixture into 12 portions and shape around each skewer. Cook the skewers on a heated oiled grill or grill pan over a medium heat for about 10 mins, turning often, until browned and cooked through, but without burning.
  4. Grill the tortillas until warmed through. Top with the skewers, frisee and cucumber yogurt.
