Lemon Cheesecakes
- 1/3 cup walnuts, toasted, finely chopped
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 4 1/2 tbsp unsalted butter, melted
- 1/2 lb cream cheese, at room temperature
- 1/4 cup heavy cream
- 1/3 cup powdered sugar + extra, to dust
- 1 tsp vanilla bean extract
- 1 tsp lemon zest
- None None blueberries, to serve
- Grease 4 - 3 inch tart rings. Transfer to a serving plate.
- In a food processor, process walnuts, sugar, cinnamon and ginger until finely chopped. Add butter and process until combined. Press walnut mixture into base of rings. Chill for 15 mins, or until firm.
- Meanwhile, beat together cream cheese, heavy cream, powdered sugar, vanilla and lemon zest until smooth. Distribute between prepared rings, smooth tops and chill for 30 mins.
- To serve, carefully remove tart rings. Top with blueberries and dust with powdered sugar.
