Pasta Puttanesca

  1. Cook the pasta in a large saucepan of boiling, salted water according to package directions. Drain.
  2. Meanwhile, heat the oil in a large skillet on medium heat. Add the garlic and cook for 30 seconds, until lightly browned. Stir in the tomato, olives, chili pepper, capers and oregano. Season to taste and simmer for 5-8 mins, stirring occasionally. Stir on the anchovies.
  3. Add the pasta and toss to coat. Serve immediately with Parmesan cheese
