Vegan Apple And Cinnamon Cupcakes

  1. Preheat the oven to 325u0b0F. Line a 12-hole cupcake tray with paper liners. Drizzle the lemon juice over the apples.
  2. Combine the flour, sugar, oats, 3 1/2 tbsp margarine and 1 tbsp water with the dough hook of a mixer, then use hands to crumble. Chill.
  3. Beat together the marzipan, maple syrup, spelt flour, cinnamon, vanilla seeds, applesauce, baking powder, baking soda, almond milk, remaining margarine and pinch of salt. Stir in the apples.
  4. Spoon into the cupcake liners and sprinkle over the oatmeal crumble. Bake for 25 mins, until a skewer comes out clean. Allow to cool on a wire rack.
