Vegan Apple And Cinnamon Cupcakes
- 1 tsp lemon juice
- 2 None apples, peeled, cored and grated
- 4 tbsp all-purpose flour
- 4 tbsp sugar
- 3 tbsp rolled oats
- 8 1/2 tbsp soy margarine
- 7 oz marzipan, grated
- 1/2 cup maple syrup
- 1 3/4 cups wholemeal spelt flour
- 1 tsp ground cinnamon
- 1 None vanilla pod, halved lengthways, seeds scraped out
- 2 tbsp applesauce
- 2 tsp baking powder
- 1 tsp baking soda
- 2/3 cup almond milk
- Preheat the oven to 325u0b0F. Line a 12-hole cupcake tray with paper liners. Drizzle the lemon juice over the apples.
- Combine the flour, sugar, oats, 3 1/2 tbsp margarine and 1 tbsp water with the dough hook of a mixer, then use hands to crumble. Chill.
- Beat together the marzipan, maple syrup, spelt flour, cinnamon, vanilla seeds, applesauce, baking powder, baking soda, almond milk, remaining margarine and pinch of salt. Stir in the apples.
- Spoon into the cupcake liners and sprinkle over the oatmeal crumble. Bake for 25 mins, until a skewer comes out clean. Allow to cool on a wire rack.
