Chicken Caesar Salad
- 1/2 cup wholegrain bread, cubed
- 2 tsp oil
- 2 slices bacon, chopped
- 7 oz baby romaine lettuce
- 12 oz shredded chicken
- 2 None eggs, hard-boiled, halved
- None None Dressing
- 1/2 cup olive oil
- 1/2 None lemon, juiced
- 1 tbsp red wine vinegar
- 1 tbsp anchovies, drained, chopped
- 2 cloves garlic, minced
- None None hot sauce, to taste
- 1/4 cup Parmesan cheese, shaved, to serve
- Preheat oven to 350u0b0F. Toast bread for 5-10 mins, until golden. Set aside to cool.
- Meanwhile, heat oil in a frying pan. Add bacon and cook for 2 mins, until crispy. Drain on paper towels. Chop. Toss with lettuce, chicken and hard-boiled eggs.
- To make the dressing, whisk together olive oil, lemon juice, vinegar, anchovies, garlic and hot sauce. Season.
- Drizzle dressing over salad and top with croutons and Parmesan. Serve immediately.
