Tuscan Pork Chops

  1. Drain the tomatoes, reserving 2 tbsp of oil.
  2. For the marinade, blend the tomatoes, basil, olives, oil, garlic, lemon peel and reserved sun-dried tomato oil for about 1 min, until combined.
  3. Pour the marinade over pork chops in a shallow dish; turn to coat. Cover and refrigerate for 3 hours or overnight.
  4. Heat a grill pan on medium-high heat or preheat the grill to medium. Drain the chops, discarding the marinade. Cook the chops for about 3-4 mins each side, or until cooked through.
  5. Serve chops with lemon wedges.
