Salmon Summer Rolls With Miso Dressing

  1. To make the miso dressing, combine rice wine vinegar, miso paste, mirin and soy sauce. Combine salmon and 2 tbsp miso dressing. Reserve remainder.
  2. Working with 1 sheet at a time, dip rice paper in hot water until slightly softened. Lay out on a clean tea towel. Add salmon, mint, mixed greens, avocado and bean sprouts. Tuck in ends of rice paper and roll up firmly. Repeat with remaining ingredients. Wrap rolls in a damp tea towel until ready to serve.
  3. Serve on a platter with reserved miso dressing.
