Bagels Brunch

  1. Heat olive oil in a medium frying pan over high heat. Cook bacon for 1-2 mins per side, until crisp and golden. Drain on paper towels.
  2. Meanwhile, half-fill a deep-frying pan with water. Add vinegar. Bring to a boil then turn down heat. Working with 1 egg at a time, crack eggs into a small bowl then slide into water. Gently poach for 2-3 mins, until egg whites have set.
  3. Arrange bacon, eggs and bagels on a serving platter. Serve with remaining ingredients.
