Banana And Chocolate Chip Loaf
- 1/2 cup mashed ripe banana
- 1/2 cup granulated sugar
- 2/3 cup dairy-free chocolate chips
- 3 None eggs, at room temperature
- 1/3 cup milk
- 1/4 cup grapeseed oil or extra light olive oil
- 1 3/4 cups gluten-free self-rising flour
- None None Gluten-free powdered sugar, to dust
- Preheat the oven to 375u0b0F. Grease and line an 8 x 4 inch loaf pan with parchment paper, extending paper at long sides for handles.
- Mix banana, sugar, chocolate chips, eggs, milk and oil in a large bowl. Add flour; stir until well combined. Using a spoon, beat for 2 mins or until mixture is slightly paler in color. Pour mixture into prepared pan; smooth top with a spatula.
- Bake for 35-40 mins or until a toothpick inserted into the center comes out clean. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack. Dust with powdered sugar.
