Brandied Cherry Friands
- 1 cup frozen pitted cherries
- 2 tbsp brandy
- 1 cup pecans, toasted
- 6 None egg whites
- 12 tbsp (1 1/2 sticks) butter, melted
- 1 1/2 cups powdered sugar
- 1/2 cup flour
- 1/4 cup granulated sugar
- Preheat the oven to 400u0b0F. Grease a 12-cup muffin pan.
- Combine cherries and brandy in small bowl; let stand 30 mins. Drain cherries; reserve liquid.
- Process nuts until ground finely.
- Whisk egg whites in medium bowl. Add butter, sifted powdered sugar and flour, and ground nuts. Divide mixture among muffin cups; top with drained cherries. Bake about 20 mins. Cool in pan 5 mins. Remove from pan; completely on wire rack.
- Meanwhile, for the cherry sauce, combine granulated sugar, 2 tbsp water and reserved cherry juice in small saucepan. Stir on low heat until sugar dissolves. Bring to a boil. Reduce heat to low; simmer, uncovered, about 3 mins or until sauce thickens slightly. Serve cherry sauce over friands.
