Orange And Date Muffins
- 2 1/4 cups self-rising flour, sifted
- 1/2 cup flour, sifted
- 1/2 tsp baking soda
- 1 cup plus 2 tbsp firmly packed brown sugar
- 8 tbsp (1 stick) butter, melted
- 1 cup buttermilk
- 1 None egg
- 2 tsp finely grated orange peel
- 1 cup pitted dried dates, coarsely chopped

- 2/3 cup firmly packed brown sugar
- 2 tsp cornstarch
- 1/3 cup orange juice
- 2 tbsp orange liqueur
- 8 tbsp (1 stick) butter, chopped
- 1 tbsp finely grated orange peel
- Preheat the oven to 400u0b0F. Grease a 12-cup muffin pan and line with paper liners.
- Mix flours, baking soda and sugar in a large bowl. Stir in remaining ingredients. Do not over-mix. Spoon into prepared muffin pan.
- Bake for 20 mins, or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool on wire rack.
- Meanwhile, for the orange sauce, combine sugar and cornstarch in a small saucepan. Gradually stir in orange juice and liqueur. Bring to a boil, stirring, for 1-2 mins, until sauce boils and thickens. Stir in butter and orange peel. Serve muffins warm, drizzled with orange sauce.
