Apple Muffins
- 4 1/2 cups + 1 tbsp powdered sugar
- 1 tbsp self-raising flour
- 2 1/2 cups oatmeal
- 1 tsp ground cinnamon
- 2 None eggs
- 1/2 cup milk
- 1/4 cup oil
- 1/3 cup apple sauce
- 1 None apple, grated
- 9 None red paper muffin cases
- 1 None egg white
- None None red food coloring
- 4-5 None green jelly beans
- 3 None cinnamon sticks, cut into 9 1 inch pieces
- Preheat the oven to 350u0b0F. Mix 2 cups of powdered sugar with the flour, oatmeal and cinnamon. Add the eggs, milk, oil, apple sauce and grated apple. Mix everything with a whisk. Put the 9 paper muffin cups into the wells of a 12 hole muffin pan. Distribute the cake mixture evenly between the muffin cups. Bake them for about 20 mins and leave them to cool on a wire rack for 1 hour.
- Beat the egg white and gradually fold in 2 1/2 cups of powdered sugar and the red food coloring. Smash the jelly beans and roll out thinly on a work surface sprinkled with powdered sugar, and cut out 9 small leaves. Coat the muffins evenly with the red icing. Insert a piece of cinnamon stick as a stalk and a jelly bean leaf on each muffin. Let the icing dry and serve.
