Curried Squash And Cilantro Muffins

  1. Preheat oven to 350u0b0F. Lightly grease a 12-cup muffin pan.
  2. Heat oil in a small frying pan over medium heat. Saute onion and curry paste for 1-2 mins. Stir in squash and lime zest. Season. Remove from heat and let cool.
  3. Sift flour into a large bowl. Whisk together milk, melted butter and eggs then mix into flour until combined. Fold in squash mixture and cilantro. Distribute between muffin recesses and bake for 20-25 mins, until golden brown. Let cool in pan for 5 mins then transfer to a wire rack. Serve warm or cold with butter.
