Curried Squash And Cilantro Muffins
- 1 tbsp oil
- 1 None onion, chopped
- 1 tbsp curry paste
- 9 oz winter squash, cooked, mashed
- 1/2 None lime, zested
- 2 1/4 cups self-rising flour
- 1 cup milk
- 7 tbsp butter, melted, plus extra to serve
- 2 None large eggs
- 1 cup fresh cilantro, chopped
- Preheat oven to 350u0b0F. Lightly grease a 12-cup muffin pan.
- Heat oil in a small frying pan over medium heat. Saute onion and curry paste for 1-2 mins. Stir in squash and lime zest. Season. Remove from heat and let cool.
- Sift flour into a large bowl. Whisk together milk, melted butter and eggs then mix into flour until combined. Fold in squash mixture and cilantro. Distribute between muffin recesses and bake for 20-25 mins, until golden brown. Let cool in pan for 5 mins then transfer to a wire rack. Serve warm or cold with butter.
