Classic Yeasted Dinner Rolls
- 2 None (1/4-oz) packets instant yeast (4 1/2 tsp)
- 1 cup warm water
- 1/4 cup warm milk
- 1/4 cup olive oil
- 4 1/3 cups bread flour
- 1 tbsp salt
- None None Beaten egg or milk, for glazing
- None None Caraway, cumin, fennel, or sesame seeds; or sea salt flakes, to garnish
- Lightly grease a baking sheet. Sprinkle the yeast over combined water, milk and oil in a small bowl. Let sit for 5 mins, until foamy. Sift the flour and salt into a large bowl.
- Pour the yeast mixture into flour. Mix to a soft dough. Turn out on a lightly floured board and knead for 10 mins, until dough is smooth and elastic.
- Place in a lightly greased bowl and cover with a tea towel. Let rise in a warm place until doubled in size (about 45 mins). Preheat the oven to 400u0b0F.
- Punch the air from the dough then knead for a few mins. Divide the dough into 16 even pieces. Knead each piece until smooth. Shape into balls. Place close together on tray. Cover with a tea towel. Let rise in a warm place until doubled in size (about 30 mins).
- Brush the tops with egg and sprinkle with seeds or sea salt. Bake for 15-20 mins, until golden and the rolls sound hollow when tapped on the bottom. Transfer to a wire rack to cool.
