Valerie'S Lemon Chicken
- 3 lb. chicken breasts
- 1 Tbsp. sherry
- 1 Tbsp. Kikkoman soy sauce
- 1/2 tsp. salt
- 2 eggs
- 1/4 c. cornstarch
- 1/2 tsp. baking powder
- 2 lemons
- 1/3 to 1/2 c. sugar
- 1 Tbsp. cornstarch
- 1 c. chicken broth
- 1 Tbsp. lemon juice
- 1 tsp. salt
- 1 Tbsp. sherry
- 3 to 4 drops yellow food coloring
- lemon peel curls for garnish
- maraschino cherries for garnish
- parsley for garnish
- In a bowl, marinate first 4 ingredients for 15 minutes.
- In another bowl, mix next 3 ingredients for batter.
- Heat 2 cups oil in deep frying pan.
- Dip chicken in batter mix and fry in oil until a rich golden brown or until chicken is completely cooked. Remove and slice into 1/2-inch strips.
- Keep warm in oven.
- Slice lemons thin and remove seeds.
