Chili-Stuffed Baked Potatoes
- 8 None large baking potatoes
- 1 tbsp oil
- 1 1/4 lb ground beef
- 1 None onion, peeled and coarsely chopped
- 1 clove garlic, minced
- 1 tbsp tomato paste
- 1 None red chili pepper, deseeded and cut into strips
- 1 - 15 oz can chopped tomatoes
- 1 cup canned sweet corn, rinsed and drained
- 1/4 cup canned kidney beans, rinsed and drained
- 1 pinch sugar
- None None fresh parsley, to garnish
- Preheat oven to 400u0b0F. Individually wrap potatoes in foil and bake for about 1 hour 15 mins.
- Meanwhile, heat oil in a large saucepan and brown ground beef until crumbly. Add onion and garlic and saute briefly. Add tomato paste and chili and cook briefly. Add 1 1/2 cups water and tomatoes, bring to a boil, season to taste then simmer over low heat for 10-15 mins. Add corn, kidney beans and sugar and cook for another 5 mins. Adjust seasoning.
- Remove potatoes from foil. Cut lengthwise and stuff with chili. Serve garnished with parsley.
