Creamy Apple Parfait With Amaretti Cookies
- 20 g butter
- 4 medium eating apples, cored and cut into wedges
- 3 tbsp maple syrup
- 1 tsp lemon juice
- 250 g mascarpone
- 100 g low fat yogurt
- 3-4 tbsp icing sugar
- 2 tbsp Calvados (or apple juice)
- 100 g whipping cream
- None None cocoa powder, for dusting
- 4 None Amarettini biscuits
- Heat the butter in a medium sized pan. Add the apple and cook, stirring, for 2 minutes. Add the maple syrup and lemon juice and cook, stirring, for another 2-5 minutes until the apples have softened, but still retain their shape. Remove from the heat and set aside to cool.
- Place the mascarpone, yogurt, sugar, and brandy (or apple juice) in a mixing bowl and stir until smooth. Beat the whipping cream until soft peaks form. Fold into the mascarpone mixture.
- Layer the creamy mascarpone mixture and cooled apple mixture into dessert glasses. Dust with cocoa powder and serve with Amaretti cookies.
