Mud Cake With Satin Chocolate Glaze
- 1 cup butter, chopped
- 7 oz dark chocolate, chopped
- 2 1/4 cups granulated sugar
- 1 tbsp instant coffee granules
- 1/2 cup all-purpose flour, sifted
- 1/2 cup self-rising flour, sifted
- 1/4 cup cocoa powder, sifted
- 3 None large eggs, beaten lightly
- -1 None Satin Chocolate Glaze
- 7 oz dark chocolate, chopped
- 2/3 cup heavy cream
- None None silver cachous or dragee cake decorations (optional)
- Preheat oven to 300u0b0F. Grease a deep 7 inch square cake pan and line base and sides with parchment paper.
- In a medium saucepan, combine butter, chocolate, sugar, 1 1/2 cups water and instant coffee granules. Stir over low heat, without boiling, until butter is just melted and mixture smooth. Transfer to a large bowl and let cool for 10 mins.
- Whisk flour and cocoa powder into chocolate mixture in 2 batches. Whisk in eggs then transfer to prepared pan. Bake for 1 hour 45 mins, or until just set in center. Cover pan with foil and set aside to cool.
- Meanwhile, for the satin chocolate glaze, combine chocolate and cream in a medium heatproof bowl. Stir over a double boiler until smooth.
- Spread a thin layer of glaze over cooled cake. Let remaining glaze stand at room temperature until thickened slightly then spread over top and sides cake.
- Sprinkle top with silver cachous or dragee cake decorations, if desired.
