Roasted Sweet Potatoes With Wilted Arugula
- 1 1/2 lb sweet potatoes, peeled, halved lengthwise and sliced into half moons
- 1 None small red onion, peeled, sliced into wedges
- 1 tbsp olive oil
- 2 tbsp maple syrup
- 2 tbsp white balsamic vinegar
- 1 tbsp chopped fresh chives
- 3 tbsp vegetable oil
- 1 (14 oz) can chickpeas, rinsed and drained
- 2 cups baby arugula
- 1/2 cup toasted chopped walnuts
- Preheat oven to 350u0b0F. Line a baking sheet with foil.
- Toss sweet potatoes and onion wedges with olive oil and 1 tbsp maple syrup. Season. Roast for 30 mins, until tender.
- Whisk together balsamic vinegar, chives, vegetable oil and remaining maple syrup. Add sweet potatoes, onions, chickpeas, arugula and walnuts and toss to combine. Serve.
