Poached Fruit With Cinnamon Puffs
- 3 None apples, peeled, quartered and cored
- 8 oz rhubarb, trimmed and cut into 2-inch lengths
- 1/2 tsp mixed spice, such as pumpkin pie spice
- 1 1/4 tbsp stevia sweetener
- 1 cup apple juice
- 1/2 tsp ground cinnamon
- 1 sheet frozen puff pastry, thawed
- 1 None egg white, lightly beaten
- 1 cup Greek-style yogurt
- Preheat the oven to 400u0b0F. Line a baking pan with parchment paper.
- For the poached fruit, combine the apple, rhubarb, mixed spice and half the sweetener in a shallow baking dish. Pour the apple juice over the fruit mixture. Cover with parchment paper, then foil. Bake for 30 mins or until the fruit is tender.
- Meanwhile, for the cinnamon puffs, combine the remaining sweetener and cinnamon in a small bowl. Place the pastry sheet on a clean work surface. Brush with egg white, then sprinkle evenly with the cinnamon mixture. Cut the sheet in half to form 2 rectangles. Cut each rectangle crosswise into 12 equal strips. Place the pastry strips on the prepared tray. Bake for 7 mins or until puffed and golden. Cool.
- Spoon the fruit mixture into serving bowls. Top with yogurt. Serve with cinnamon puffs.
