Zucchini Vegetable Pie
- 22 SnackWell's fat-free wheat crackers
- 1/4 c. shredded reduced-fat Swiss cheese
- 1 c. sliced mushrooms
- 1 c. shredded zucchini
- 1/3 c. chopped red or green pepper
- 1/3 c. chopped scallions
- 2 cloves garlic, minced
- 2 tsp. margarine
- 1 1/2 c. Egg Beaters
- 1 c. skim milk
- 1 tsp. dried oregano leaves
- 1/4 tsp. coarsely ground black pepper
- 1/8 tsp. liquid hot pepper seasoning
- Line bottom of greased 9-inch pie plate with 10 crackers. Stand remaining crackers around edge.
- Sprinkle bottom with cheese.
- In skillet, saute mushrooms, zucchini, pepper, scallions and garlic in margarine until tender.
- Spread vegetable in plate. Combine remaining ingredients; pour over vegetable mixture.
- Bake at 375u0b0 for 30 to 35 minutes or until set.
- Tent crackers along edge with foil to prevent overbrowning.
- Makes 6 servings.
