Zucchini Vegetable Pie

  1. Line bottom of greased 9-inch pie plate with 10 crackers. Stand remaining crackers around edge.
  2. Sprinkle bottom with cheese.
  3. In skillet, saute mushrooms, zucchini, pepper, scallions and garlic in margarine until tender.
  4. Spread vegetable in plate. Combine remaining ingredients; pour over vegetable mixture.
  5. Bake at 375u0b0 for 30 to 35 minutes or until set.
  6. Tent crackers along edge with foil to prevent overbrowning.
  7. Makes 6 servings.
