Beef And Pepper Stir-Fry
- 2 tsp cornstarch
- 2 tbsp soy sauce
- 1 None splash of sesame oil
- 3 tbsp peanut oil
- 14 oz beef sirloin steak, trimmed and thinly sliced, at room temperature
- 1/2 tsp salt
- 1 large red pepper, seeded and cut into strips
- 2 small hot red chili peppers, seeded if desired, finely chopped
- 1 bunch green onions, trimmed and sliced
- 1 tbsp grated ginger
- 2 cloves garlic, chopped
- None None Toasted sesame seeds, to serve
- Mix cornstarch, 1/4 cup water, soy sauce and sesame oil in a small bowl.
- Heat a wok on high heat, then add 2 tbsp oil. Swirl oil to coat the wok. When the oil is really hot (hazing), add beef slices. Stir-fry for 1-2 mins, until meat has lost its pinkness and is lightly browned. Remove beef from the wok and season with salt.
- Reheat the wok, add 1 tbsp oil, and when oil is hot add red pepper and chili peppers. Stir-fry for 1 min. Add green onions, ginger and garlic and stir-fry for 30 seconds. Return beef to wok, adding any juices. Stir in cornstarch and soy sauce mixture. Bring to a boil; cook for 1 min. Serve sprinkled with sesame seeds.
