Fig And Almond Tart
- 2 tbsp powdered sugar
- 1 1/4 cups all-purpose flour
- 6 tbsp butter, diced
- 1 None egg, separated + 1 egg white, whites chilled
- 1/2 cup granulated sugar
- 1 cup ground almonds
- 2-3 drops bitter almond extract
- 5 None fresh figs, cut into thin wedges
- 1/3 cup sliced almonds
- 1 tbsp brown sugar
- In a bowl, combine powdered sugar and flour. Cut in butter until mixture resembles breadcrumbs. Add egg yolk and knead until smooth. Wrap in plastic wrap and chill for 1 hour.
- Preheat oven to 400u0b0F. On a floured work surface, roll out dough then use to line an 8 inch tart pan. In a bowl, combine granulated sugar, ground almonds and almond extract. Beat egg whites to stiff peaks then fold into almond mixture. Transfer to tart shell and smooth out. Arrange figs in a fan shape over top. Sprinkle with sliced almonds and brown sugar. Bake for 25-35 mins, until golden.
- Serve warm or cold.
