Vegetarian White Bean Ragout

  1. Bring the beer, stock, onions, garlic, peppers and chili pepper to a boil, cover and simmer for about 5 mins.
  2. Reserve 1 tbsp of cilantro for garnish and mix the rest with the vinegar. Add this to the vegetables along with the beans, paprika, oregano and lime juice to taste. Simmer for about 10 mins, seasoning with salt and pepper. Sprinkle with the reserved cilantro to serve.
