Squash Pie
- 1 small butternut squash
- 2 1/4 c. sugar (1/2 white and 1/2 brown)
- 1 1/2 sticks butter
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1 Tbsp. vanilla
- 1 Tbsp. lemon extract
- 1 large can milk
- 1/2 can pasteurized milk
- 4 eggs
- 1 Tbsp. orange peel
- Peel squash, remove seeds, cut in pieces.
- Boil in salt water, add buttertnd
- sugar until soft.teat in mixer well, remove beater andtinse
- under water to wash out any strings. Add butter and
- sugar,
- beat again until light.
- Add eggs, one at a time, then
- add
- milk,
- nutmeg,
- cinnamon,
- orange peel, vanilla and lemon extract.
- Bake in crust at 350u0b0 until brown. (Bake on cookie sheet
- if preferred.) Add 1 small box raisins for variety.
