Greek Yogurt Cake
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 3 None large eggs, separated
- 2 1/4 cups self-rising flour
- 1/2 tsp baking soda
- 1/3 cup blanched almonds, finely chopped
- 1 cups Greek yogurt
- None None powdered sugar, for dusting
- Preheat oven to 350u0b0F. Grease an 8x12 inch rimmed baking tray and line base and sides with parchment paper.
- Beat butter and sugar until light and fluffy. Add egg yolks and beat until combined. Sift in flour and baking soda then fold in. Fold in nuts and yogurt. Whip egg whites to soft peaks then fold in. Transfer to prepared pan and bake for 35 mins, or until a skewer inserted in the center comes out clean.
- Let cool in pan for 5 mins then transfer to a wire rack to cool completely. Dust with powdered sugar to serve.
