Chili Con Carne
- 2 tbsp oil
- 1 kg minced beef
- 1 medium onion, finely diced
- 3 cloves garlic, finely chopped
- 3 tbsp tomato paste
- 400 ml tomato juice
- 425 ml tin of chopped tomatoes
- 425 ml tin of kidney beans, drained and rinsed
- 425 ml tin of baked beans
- 425 ml tin of corn, drained
- 6 tbsp creme fraiche
- None None chopped rosemary for garnish
- Heat oil in a nonstick frying pan and brown ground meat. Season then add onion and garlic and cook for 2-3 mins. Add tomato paste and cook for 2-3 min. Add tomato juice and chopped tomatoes and simmer for 2 mins. Add beans and corn, season and simmer for 3-4 mins. Serve with a dollop of creme fraiche (or sour cream, if using). Garnish with sliced chili pepper and rosemary.
