Dark Chocolate And Almond Torte
- 7 oz dark chocolate, 6 oz chopped, 1 oz grated
- 13 tbsp butter, chopped
- 5 None large eggs, separated
- 3/4 cup granulated sugar
- 1 1/4 cups ground almonds
- 1/2 cup sliced almonds, toasted, roughly chopped
- 1 cup whole almonds, to decorate
- None None FOR THE GANACHE
- 4 oz dark chocolate, chopped
- 1/3 cup heavy cream
- Preheat oven to 350u0b0F. Grease and line a deep 8 inch cake pan with parchment paper.
- To make the torte, stir chopped chocolate and butter in small saucepan over low heat until smooth. Let cool to room temperature.
- Beat egg yolks and sugar until thick and creamy. Fold in chocolate mixture, ground almonds, sliced almonds and grated chocolate. Beat egg whites to soft peaks then fold into batter in 2 batches. Transfer to prepared pan and bake for 45 mins. Let cool in pan for 15 mins then transfer to a wire rack to cool completely.
- Meanwhile, to make the ganache, stir chocolate and cream in a small saucepan over low heat until smooth. Spread over torte then decorate with whole almonds. Let stand for 30 mins before serving.
