Beef And Sweet Potato Stew

  1. Lightly coat beef in flour, shaking off excess. Heat oil in a large saucepan. Cook beef, in batches, until browned. Set aside.
  2. Cook onions, garlic and bacon in same pan, stirring, until bacon is crisp. Add tomato paste and cook, stirring, for 1 min. Return beef to pan along with stock, tomatoes and Worcestershire sauce. Bring to a boil then reduce heat and simmer, covered, for 1 hour, stirring occasionally.
  3. Add potatoes, sweet potato and pepper. Simmer, uncovered, stirring occasionally, for 30 mins, or until beef is tender.
  4. Sprinkle with thyme. Serve with mashed potatoes or crusty bread.
