Baked Pea Pudding With Bacon

  1. Preheat oven to 350u0b0F. Grease 4 x 7 oz ramekins. Cook peas in boiling salted water for 4 mins, drain and rinse under cold water. Set aside 1/4 lb and puree the rest. Whisk eggs, creme fraiche (or sour cream, if using) and pea puree. Season then transfer to prepared ramekins and bake for 25 mins. Once just set, remove from oven and turn out onto 4 serving plates.
  2. To finish, fry bacon then drain on paper towels. Whisk lemon juice with oil then season and add a pinch of sugar. Add chopped mint then drizzle over puddings. Garnish with reserved peas, 1 slice of bacon and mint. Serve warm or cold.
